In a bowl, combine one large handful of leafy greens, 1 handful halved cherry tomatoes, 1 handful chopped cucumber, 1 handful halved olives, and a sprinkling of thinly sliced red onion. Drizzle with olive oil and your favourite vinegar.
Now for the cashew feta cheese: in a high-speed blender, add 210g cashews, juice of 1 lemon, 3 Tbsp water, and 1/2 tsp salt, Blend on low speed using a tamper until creamy. You want it to taste salty and tart when it's all done. Top the salad with 1/3 of the cheese.
