Is this a stir fry? Is this a salad? Who knows. Who cares! The important thing is that it's crazy yummy and takes only 10 mins to make. It's a time-saving super hero for a quick dinner or an easy lunchbox.
Pre-heat oven to 180 degrees C/350 F. Slice 100g-125g raw chicken breast into thin strips. Lay the strips in one layer on a baking dish, sprinkle with garlic granules, sea salt, and fresh black pepper. Place in over and bake for 10 mins.
Meanwhile, combine in a dish 1 medium grated carrot, 1 thinly sliced stalk celery, and 1/2-3/4 medium grated courgette. The aim is to reach 300g in total weight. Drizzle on a few generous glugs of olive oil and liquid aminos to taste (Bragg's or coconut aminos). Add 1 Tbsp sesame seeds, a large pinch of ground ginger, a pinch of garlic granules or a minced small fresh clove, and a pinch of red chili flakes or fresh minced red chili (optional). Mix to combine. Add the cooked chicken on top.
You can also make up the chicken in large batches and keep in the fridge for easy access over the next few days.
